Description

Ingredients

  • 2 medium zucchinis
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup mini pepperoni (optional)
  • 1/4 cup diced bell peppers (optional)
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Wash and slice zucchinis into 1/4-inch thick rounds. Arrange the zucchini slices in a single layer on the prepared baking sheet.
  3. Season the zucchini slices lightly with salt and black pepper.
  4. Spread about 1 teaspoon of pizza sauce on each zucchini slice.
  5. Sprinkle each slice with shredded mozzarella cheese.
  6. Add mini pepperoni and diced bell peppers, if using.
  7. Sprinkle with dried oregano.
