A comforting and flavorful zucchini gratin, perfect as a side dish.
Ingredients

- 3 medium zucchini, sliced ¼ inch thick
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup vegetable broth
- ½ cup grated Parmesan cheese
- ¼ cup breadcrumbs
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Stir in sliced zucchini, cream, vegetable broth, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, until zucchini is slightly tender.
- Transfer the zucchini mixture to a 9×13 inch baking dish.
- In a small bowl, combine Parmesan cheese and breadcrumbs. Sprinkle evenly over the zucchini.
- Bake for 20-25 minutes, or until golden brown and bubbly.
- Garnish with fresh parsley before serving.
Notes
- For a richer flavor, use gruyere cheese instead of Parmesan.
- Add a pinch of nutmeg to the cream mixture for extra depth.
- This dish can be prepared ahead of time and baked just before serving.
