Description

A comforting and flavorful zucchini gratin, perfect as a side dish.


Ingredients

  • 3 medium zucchini, sliced ¼ inch thick
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup vegetable broth
  • ½ cup grated Parmesan cheese
  • ¼ cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Stir in sliced zucchini, cream, vegetable broth, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, until zucchini is slightly tender.
  5. Transfer the zucchini mixture to a 9×13 inch baking dish.
  6. In a small bowl, combine Parmesan cheese and breadcrumbs. Sprinkle evenly over the zucchini.
  7. Bake for 20-25 minutes, or until golden brown and bubbly.
  8. Garnish with fresh parsley before serving.

Notes

  • For a richer flavor, use gruyere cheese instead of Parmesan.
  • Add a pinch of nutmeg to the cream mixture for extra depth.
