Description

Ingredients

  • 1 medium zucchini, shredded
  • 1/2 small onion, finely chopped
  • 6 large eggs
  • 1/4 cup milk
  • 1/4 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in an oven-safe 8-inch skillet over medium heat.
  3. Add shredded zucchini and chopped onion to the skillet. Sauté for 5-7 minutes, or until softened.
  4. In a medium bowl, whisk together eggs, milk, cheddar cheese, salt, and pepper.
  5. Pour the egg mixture over the zucchini and onion in the skillet.
  6. Cook on the stovetop for 2-3 minutes, until the edges begin to set.
  7. Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the frittata is set and lightly golden brown.
