Description

Crispy and flavorful zucchini and corn fritters, perfect as a snack or light meal.


Ingredients

  • 2 cups grated zucchini, squeezed dry
  • 1 cup fresh or frozen corn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup finely chopped red onion
  • 1 large egg, lightly beaten
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions

  1. In a large bowl, combine the grated zucchini, corn, flour, red onion, egg, parsley, baking powder, salt, and pepper. Mix until just combined.
  2. Heat the olive oil in a large non-stick skillet over medium heat.
  3. Drop spoonfuls of the batter into the hot skillet, flattening slightly with the back of the spoon. Do not overcrowd the pan.
  4. Cook for 3-4 minutes per side, or until golden brown and cooked through.
  5. Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
  6. Serve warm with your favorite dipping sauce.
