- 2 cups grated zucchini, squeezed dry
- 1 cup fresh or frozen corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup finely chopped red onion
- 1 large egg, lightly beaten
- 2 tablespoons chopped fresh parsley
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, for frying
Instructions
- In a large bowl, combine the grated zucchini, corn, flour, red onion, egg, parsley, baking powder, salt, and pepper. Mix until just combined.
- Heat the olive oil in a large non-stick skillet over medium heat.
- Drop spoonfuls of the batter into the hot skillet, flattening slightly with the back of the spoon. Do not overcrowd the pan.
- Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
Notes
- Ensure the zucchini is thoroughly squeezed dry to prevent soggy fritters.
- Adjust the amount of salt and pepper to your taste.
