Description

This zesty salmon dish features roasted beets and spinach, offering a flavorful and healthy meal. The salmon is seasoned with lemon and herbs, then baked to perfection. Roasted beets add a sweet and earthy counterpoint, while fresh spinach provides a touch of green.


Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 1 lemon, thinly sliced
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 medium beets, peeled and cut into 1-inch pieces
  • 4 cups fresh spinach

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss the cut beets with 1 tablespoon of olive oil, salt, and pepper on a baking sheet.
  3. Roast the beets for 20-25 minutes, or until tender.
  4. While the beets are roasting, place the salmon fillets on a separate baking sheet.
  5. Drizzle the salmon with the remaining 1 tablespoon of olive oil.
  6. Sprinkle the salmon with dill, garlic powder, salt, and pepper.
  7. Top each salmon fillet with a few lemon slices.
  8. Bake the salmon for 12-15 minutes, or until cooked through and flaky.
  9. In the last 5 minutes of salmon cooking, add the spinach to the baking sheet with the roasted beets and toss to wilt.
  10. Serve the zesty salmon with the roasted beets and wilted spinach.

  • You can use other herbs like parsley or chives.
  • For a spicier kick, add a pinch of red pepper flakes.
