- 4 salmon fillets (about 6 ounces each)
- 2 tablespoons olive oil
- 1 lemon, thinly sliced

- 1/2 teaspoon garlic powder

- 2 medium beets, peeled and cut into 1-inch pieces
- 4 cups fresh spinach
Instructions
- Preheat oven to 400°F (200°C).
- Toss the cut beets with 1 tablespoon of olive oil, salt, and pepper on a baking sheet.
- Roast the beets for 20-25 minutes, or until tender.
- While the beets are roasting, place the salmon fillets on a separate baking sheet.
- Drizzle the salmon with the remaining 1 tablespoon of olive oil.
- Sprinkle the salmon with dill, garlic powder, salt, and pepper.
- Top each salmon fillet with a few lemon slices.
- Bake the salmon for 12-15 minutes, or until cooked through and flaky.
- In the last 5 minutes of salmon cooking, add the spinach to the baking sheet with the roasted beets and toss to wilt.
- Serve the zesty salmon with the roasted beets and wilted spinach.
