- 1 cup granulated sugar
- 1/2 cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder

- 1 cup milk
- 1/2 cup shortening
- 1 teaspoon vanilla extract (for filling)
- 1 1/2 cups powdered sugar
- 1 (7 ounce) jar marshmallow creme
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
- In a large bowl, cream together sugar and butter until light and fluffy. Beat in the egg and 1 teaspoon vanilla extract.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Drop rounded tablespoons of batter onto the prepared baking sheets.
- Bake for 8 to 10 minutes, or until the edges are set and the centers are still soft. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
- For the filling: In a medium bowl, beat shortening until creamy. Beat in 1 teaspoon vanilla extract, powdered sugar, and marshmallow creme until smooth and fluffy.
- Once cookies are completely cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie to create a sandwich.
Notes
- Store whoopie pies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
- For a richer chocolate flavor, use dark cocoa powder.
- You can experiment with different extracts in the filling, such as peppermint or almond.
