Description

Soft, cake-like cookies filled with a creamy marshmallow frosting, perfect for a sweet treat.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup shortening
  • 1 teaspoon vanilla extract (for filling)
  • 1 1/2 cups powdered sugar
  • 1 (7 ounce) jar marshmallow creme

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together sugar and butter until light and fluffy. Beat in the egg and 1 teaspoon vanilla extract.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Drop rounded tablespoons of batter onto the prepared baking sheets.
  6. Bake for 8 to 10 minutes, or until the edges are set and the centers are still soft. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  7. For the filling: In a medium bowl, beat shortening until creamy. Beat in 1 teaspoon vanilla extract, powdered sugar, and marshmallow creme until smooth and fluffy.
  8. Once cookies are completely cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie to create a sandwich.

Notes

  • Store whoopie pies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
  • For a richer chocolate flavor, use dark cocoa powder.
  • You can experiment with different extracts in the filling, such as peppermint or almond.
