- 1 (12 ounce) package white chocolate chips
- 1 (8 ounce) package cream cheese, softened
- 1 cup confectioners’ sugar, or more to taste
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans, optional
Instructions
- Thaw raspberries and drain any excess liquid.
- Melt white chocolate chips in a microwave-safe bowl or over a double boiler. Stir until smooth.
- Beat cream cheese, confectioners’ sugar, and vanilla extract in a medium bowl until smooth.
- Stir in melted white chocolate, raspberries, and pecans (if using).
- Cover and refrigerate for at least 1 hour, or until firm enough to roll.
- Roll mixture into small balls and place on a parchment-lined baking sheet.
- Refrigerate until ready to serve.
Notes
- You can substitute other berries for raspberries.
- For a richer flavor, use full-fat cream cheese.
- Adjust the amount of confectioners’ sugar to your sweetness preference.
