- 1 medium head cabbage, chopped
- 2 large carrots, sliced
- 1 onion, diced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat. Add a splash of water or broth.
- Sauté onions, carrots, and celery until softened (about 5 minutes).
- Add garlic and cook for 1 minute.
- Stir in cabbage, broth, tomatoes, thyme, oregano, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender.
- Remove bay leaf. Season with salt and pepper.
- Serve hot.

- Store leftovers in the fridge for up to 4 days.
