A delicious vegan ramen with rich sesame flavor and fresh vegetables.
Ingredients

- 2 packs of ramen noodles
- 4 cups vegetable broth
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp tahini
- 1 clove garlic, minced
- 1 tsp ginger, grated
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 1 carrot, julienned
- 1 green onion, chopped
- 1 tbsp sesame seeds
Instructions
- Heat sesame oil in a pot over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Pour in vegetable broth and bring to a boil.
- Add mushrooms and carrots, simmer for 5 minutes.
- Stir in soy sauce and tahini.
- Cook ramen noodles separately according to package instructions.
- Add spinach to the broth and cook for 1 minute.
- Divide noodles into bowls and pour broth over them.
- Garnish with green onions and sesame seeds.
Notes
- Use gluten-free noodles if needed.
- Adjust soy sauce to taste.
- Add tofu for extra protein.
