Description

A delicious vegan ramen with rich sesame flavor and fresh vegetables.


Ingredients

Scale
  • 2 packs of ramen noodles
  • 4 cups vegetable broth
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp tahini
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 1 carrot, julienned
  • 1 green onion, chopped
  • 1 tbsp sesame seeds

Instructions

  1. Heat sesame oil in a pot over medium heat.
  2. Add garlic and ginger, sauté for 1 minute.
  3. Pour in vegetable broth and bring to a boil.
  4. Add mushrooms and carrots, simmer for 5 minutes.
  5. Stir in soy sauce and tahini.
  6. Cook ramen noodles separately according to package instructions.
  7. Add spinach to the broth and cook for 1 minute.
  8. Divide noodles into bowls and pour broth over them.
  9. Garnish with green onions and sesame seeds.

Notes

  • Use gluten-free noodles if needed.
  • Adjust soy sauce to taste.
