- 1 3/4 cups all-purpose flour
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1/3 cup melted coconut oil
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/4 cup almond milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In another bowl, whisk pumpkin puree, maple syrup, coconut oil, vanilla, and almond milk.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into the pan. Bake for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
- Use canned or homemade pumpkin puree.
- Replace maple syrup with agave if needed.
- Store in an airtight container for up to 5 days.
