Description

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/3 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 cup almond milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, whisk pumpkin puree, maple syrup, coconut oil, vanilla, and almond milk.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Pour batter into the pan. Bake for 50-60 minutes until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use canned or homemade pumpkin puree.
  • Replace maple syrup with agave if needed.
  • Store in an airtight container for up to 5 days.
