These Pistachio Seven Layer Cookie Bars are a delicious dairy-free and vegan treat. They feature layers of buttery crust, sweetened condensed coconut milk, chocolate chips, and pistachios for a rich and satisfying dessert.

- 1 1/2 cups all-purpose flour
- 1/2 cup vegan butter, melted
- 1/4 cup granulated sugar
- 1 can (14 oz) sweetened condensed coconut milk
- 1 cup dairy-free chocolate chips
- 1 cup shelled pistachios, roughly chopped
- 1/2 cup shredded coconut
- 1/4 cup vegan white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix the flour, melted vegan butter, and sugar until combined. Press the mixture into the bottom of the prepared pan.
- Bake the crust for 10 minutes, then remove from the oven.
- Pour the sweetened condensed coconut milk evenly over the crust.
- Sprinkle the chocolate chips, pistachios, shredded coconut, and white chocolate chips in layers.
- Bake for 25 minutes or until the edges are golden brown.
- Let cool completely before slicing into bars.
Notes
- Store in an airtight container at room temperature for up to 5 days.
- For a nut-free version, replace pistachios with sunflower seeds.
- Use gluten-free flour if needed.
