Description

A fresh and zesty vegan Caesar salad with kale and a creamy lemon dressing.


Ingredients

Scale
  • 4 cups chopped kale
  • 1/4 cup vegan Caesar dressing
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 2 tbsp nutritional yeast
  • 1/4 tsp black pepper
  • 1/4 cup vegan parmesan (optional)
  • 1/2 cup croutons

Instructions

  1. Wash and dry the kale thoroughly.
  2. In a bowl, mix the vegan Caesar dressing, lemon juice, Dijon mustard, garlic, and nutritional yeast.
  3. Massage the dressing into the kale for 2-3 minutes until softened.
  4. Top with black pepper, vegan parmesan, and croutons.
  5. Toss lightly before serving.

Notes

  • Store leftover dressing in the fridge for up to 3 days.
  • Swap kale with romaine lettuce if preferred.
