Description

A delicious and healthy vegan falafel wrap with creamy yogurt sauce and tahini dressing.


Ingredients

Scale
  • 1 cup dried chickpeas (soaked overnight)
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1/2 cup fresh parsley (chopped)
  • 1/2 cup fresh cilantro (chopped)
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 2 tbsp flour
  • 1/2 tsp baking soda
  • Oil for frying
  • 4 whole wheat tortillas
  • 1 cup vegan yogurt
  • 1 tbsp lemon juice
  • 2 tbsp tahini
  • 1 tbsp water
  • 1/2 tsp salt
  • Sliced cucumber, tomato, and lettuce for serving

Instructions

  1. Drain soaked chickpeas and add to a food processor.
  2. Add onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and cayenne pepper.
  3. Pulse until mixture is coarse but holds together.
  4. Transfer mixture to a bowl and stir in flour and baking soda.
  5. Shape into small patties and fry in hot oil until golden brown.
  6. Mix vegan yogurt with lemon juice for the yogurt sauce.
  7. Whisk tahini with water and salt for the dressing.
  8. Warm tortillas and layer with falafel, vegetables, yogurt sauce, and tahini dressing.
  9. Roll tightly and serve.

Notes

  • For crispier falafel, refrigerate the mixture for 30 minutes before frying.
  • Bake falafel at 375°F for 20 minutes for a healthier option.
