Description

Delicious vegan cookies made with chickpeas and chocolate chips.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup vegan chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blend chickpeas, almond butter, maple syrup, vanilla, baking powder, and salt in a food processor until smooth.
  3. Fold in chocolate chips.
  4. Scoop dough onto a lined baking sheet.
  5. Bake for 12-15 minutes.
  6. Let cool before serving.
