Ingredients

  • 1 head of romaine lettuce, chopped
  • 1/2 cup vegan Parmesan cheese
  • 1/2 cup croutons
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Wash and chop the romaine lettuce, then place it in a large bowl.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and black pepper.
  3. Pour the dressing over the lettuce and toss to coat evenly.
