Ingredients

- 4 medium sweet potatoes
- 2 tbsp butter
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cinnamon
- 1/4 cup brown sugar
- 1/2 cup shredded cheddar cheese
- 2 tbsp chopped pecans
Instructions
- Preheat oven to 400°F.
- Wash sweet potatoes and pierce with a fork.
- Bake for 45-50 minutes until tender.
- Let cool, then cut in half lengthwise.
- Scoop out the flesh, leaving a thin layer inside the skins.
- Mash the flesh with butter, milk, salt, pepper, cinnamon, and brown sugar.
- Fill the skins with the mashed mixture.
- Sprinkle with cheese and pecans.
- Bake for 15 minutes until cheese melts.

- Let potatoes cool before handling.
