Ingredients

Scale
  • 4 medium sweet potatoes
  • 2 tbsp butter
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp chopped pecans

Instructions

  1. Preheat oven to 400°F.
  2. Wash sweet potatoes and pierce with a fork.
  3. Bake for 45-50 minutes until tender.
  4. Let cool, then cut in half lengthwise.
  5. Scoop out the flesh, leaving a thin layer inside the skins.
  6. Mash the flesh with butter, milk, salt, pepper, cinnamon, and brown sugar.
  7. Fill the skins with the mashed mixture.
  8. Sprinkle with cheese and pecans.
  9. Bake for 15 minutes until cheese melts.
