These Turtle Cookies feature a rich caramel, crunchy pecans, and decadent chocolate, all in a delightful cookie form.

- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 1 cup chocolate chips
- 1/2 cup caramel bits or chopped soft caramels
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Stir in chopped pecans and chocolate chips.
- Drop rounded tablespoons of dough onto prepared baking sheets. Press a few caramel bits into the top of each cookie.
- Bake for 9-11 minutes, or until edges are golden brown and centers are set.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

- For best results, use good quality caramel.
- Do not overmix the dough.
