Description

These Turtle Cookies feature a rich caramel, crunchy pecans, and decadent chocolate, all in a delightful cookie form.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1 cup chocolate chips
  • 1/2 cup caramel bits or chopped soft caramels

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Stir in chopped pecans and chocolate chips.
  6. Drop rounded tablespoons of dough onto prepared baking sheets. Press a few caramel bits into the top of each cookie.
  7. Bake for 9-11 minutes, or until edges are golden brown and centers are set.
  8. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
