Description

These turkey meatloaf muffins with sweet potato topping are a healthy and delicious meal. They are easy to make and perfect for meal prep.


Ingredients

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1/4 cup chopped onion
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mashed sweet potatoes
  • 2 tablespoons butter, melted
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
  2. In a large bowl, combine ground turkey, breadcrumbs, 1/4 cup milk, ketchup, onion, egg, 1 teaspoon salt, and 1/2 teaspoon pepper. Mix until just combined.
  3. Divide the mixture evenly among the muffin cups, filling each about two-thirds full.
  4. Bake for 20-25 minutes, or until cooked through.
  5. While the meatloaf is baking, prepare the sweet potato topping. In a medium bowl, combine mashed sweet potatoes, melted butter, 1/4 cup milk, salt, and pepper. Mix until smooth.
  6. Remove the meatloaf muffins from the oven. Top each muffin with a dollop of sweet potato topping.
  7. Return to the oven and bake for an additional 5-7 minutes, or until the sweet potato topping is lightly browned.
  8. Serve hot.

Notes

  • You can use any type of ground meat for this recipe, such as beef or chicken.
  • Feel free to add other vegetables to the meatloaf mixture, such as shredded carrots or zucchini.
