These turkey meatloaf muffins with sweet potato topping are a healthy and delicious meal. They are easy to make and perfect for meal prep.

- 1 pound ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup ketchup
- 1/4 cup chopped onion
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups mashed sweet potatoes
- 2 tablespoons butter, melted
- 1/4 cup milk
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
- In a large bowl, combine ground turkey, breadcrumbs, 1/4 cup milk, ketchup, onion, egg, 1 teaspoon salt, and 1/2 teaspoon pepper. Mix until just combined.
- Divide the mixture evenly among the muffin cups, filling each about two-thirds full.
- Bake for 20-25 minutes, or until cooked through.
- While the meatloaf is baking, prepare the sweet potato topping. In a medium bowl, combine mashed sweet potatoes, melted butter, 1/4 cup milk, salt, and pepper. Mix until smooth.
- Remove the meatloaf muffins from the oven. Top each muffin with a dollop of sweet potato topping.
- Return to the oven and bake for an additional 5-7 minutes, or until the sweet potato topping is lightly browned.
- Serve hot.
Notes
- You can use any type of ground meat for this recipe, such as beef or chicken.
- Feel free to add other vegetables to the meatloaf mixture, such as shredded carrots or zucchini.
- For a spicier kick, add a pinch of cayenne pepper to the meatloaf mixture.
- Leftover muffins can be stored in an airtight container in the refrigerator for up to 3 days.
