Ingredients
Scale
- 1 pound white fish fillets (such as cod, tilapia, or mahi-mahi)
- 1 cup Thai sweet chili sauce
- 1 tablespoon fresh lime juice
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon garlic powder
- 1 bunch broccolini, trimmed
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Fresh cilantro, chopped, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together the Thai sweet chili sauce, lime juice, ginger, and garlic powder.
- Place the fish fillets on the prepared baking sheet. Season lightly with salt and pepper.
- Spoon half of the sweet chili sauce mixture over the fish, ensuring it is evenly coated.
- In a separate bowl, toss the broccolini with olive oil, salt, and pepper. Arrange the broccolini around the fish on the baking sheet.
- Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork, and the broccolini is tender-crisp.
- Serve the baked fish and broccolini with the remaining sweet chili sauce on the side. Garnish with fresh cilantro if desired.
Notes
- Adjust the amount of sweet chili sauce to your preference.
- You can use other vegetables like asparagus or green beans instead of broccolini.
- For extra flavor, marinate the fish in the sweet chili sauce for 15-30 minutes before baking.
