Description

This recipe features flaky fish baked with a sweet and spicy Thai chili sauce, served alongside tender broccolini. It is a quick and flavorful meal perfect for a weeknight.

Ingredients

Scale
  • 1 pound white fish fillets (such as cod, tilapia, or mahi-mahi)
  • 1 cup Thai sweet chili sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon garlic powder
  • 1 bunch broccolini, trimmed
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the Thai sweet chili sauce, lime juice, ginger, and garlic powder.
  3. Place the fish fillets on the prepared baking sheet. Season lightly with salt and pepper.
  4. Spoon half of the sweet chili sauce mixture over the fish, ensuring it is evenly coated.
  5. In a separate bowl, toss the broccolini with olive oil, salt, and pepper. Arrange the broccolini around the fish on the baking sheet.
  6. Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork, and the broccolini is tender-crisp.
  7. Serve the baked fish and broccolini with the remaining sweet chili sauce on the side. Garnish with fresh cilantro if desired.

Notes

  • Adjust the amount of sweet chili sauce to your preference.
  • You can use other vegetables like asparagus or green beans instead of broccolini.
  • For extra flavor, marinate the fish in the sweet chili sauce for 15-30 minutes before baking.
