Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup corn kernels
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
- 1/4 cup sour cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Season chicken with chili powder, garlic powder, salt, and pepper.
- Cook chicken for 6-7 minutes per side until fully done.
- Remove chicken and let rest. In the same pan, add corn and cook for 3-4 minutes.
- Slice chicken and assemble bowls with corn, chicken, cotija cheese, and cilantro.
- Drizzle with sour cream and serve with lime wedges.

- Use grilled corn for extra flavor.
- Substitute feta for cotija if needed.
