Ingredients

- 1 (5-7 lb) prime rib roast
- 2 tbsp kosher salt
- 1 tbsp black pepper
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 4 cloves garlic, minced
- 2 tbsp olive oil
Instructions
- Preheat oven to 450°F.
- Mix salt, pepper, rosemary, thyme, garlic, and olive oil in a bowl.
- Rub the mixture all over the prime rib.
- Place roast fat-side up on a rack in a roasting pan.
- Roast for 15 minutes, then reduce heat to 325°F.
- Cook until internal temperature reaches 120°F for medium-rare (about 15 minutes per pound).
- Rest for 20 minutes before slicing.
