Description

Crispy Stuffed Zucchini Blossoms filled with ricotta cheese, parmesan, and fresh herbs, then lightly fried.


Ingredients

  • 12 zucchini blossoms with stems
  • 1 cup fresh ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1/2 teaspoon lemon zest
  • Salt and freshly ground black pepper to taste
  • 1/2 cup all-purpose flour
  • 1/2 cup cold sparkling water or club soda
  • Vegetable oil for frying

Instructions

  1. Gently clean the zucchini blossoms, removing any pistils or stamens from the center. Be careful not to tear them.
  2. In a small bowl, combine the ricotta cheese, parmesan cheese, parsley, chives, lemon zest, salt, and pepper. Mix until well combined.
  3. Carefully open each zucchini blossom and spoon about 1 tablespoon of the ricotta mixture into the center. Gently twist the ends of the petals to seal the filling inside.
  4. In another bowl, whisk together the flour and sparkling water until a smooth, thin batter forms.
  5. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  6. Dip each stuffed zucchini blossom into the batter, ensuring it is fully coated.
  7. Carefully place the battered blossoms into the hot oil, frying a few at a time to avoid overcrowding.
  8. Fry for 2-3 minutes per side, or until golden brown and crispy.
  9. Remove the fried blossoms with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  10. Serve immediately, optionally with a sprinkle of extra parmesan cheese or a squeeze of fresh lemon.
