- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 1/4 cup cream cheese, softened
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup breadcrumbs (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C).
- Butterfly each chicken breast by slicing horizontally almost all the way through, creating a pocket.
- In a medium bowl, combine chopped spinach, mozzarella cheese, cream cheese, minced garlic, salt, and pepper.
- Spoon the spinach and cheese mixture evenly into each chicken breast pocket.
- Secure the opening with toothpicks if needed.
- Place the stuffed chicken breasts in a baking dish. Drizzle with olive oil and sprinkle with breadcrumbs, if using.
- Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove from oven and let rest for a few minutes before serving.
Notes
- You can use other cheeses like feta or provolone.
- Add a pinch of red pepper flakes for a little heat.
- Serve with a side of roasted vegetables or a fresh salad.
