Description

Chicken breasts stuffed with a flavorful mixture of spinach, cheese, and herbs, then baked until golden and juicy.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Butterfly each chicken breast by slicing horizontally almost all the way through, creating a pocket.
  3. In a medium bowl, combine chopped spinach, mozzarella cheese, cream cheese, minced garlic, salt, and pepper.
  4. Spoon the spinach and cheese mixture evenly into each chicken breast pocket.
  5. Secure the opening with toothpicks if needed.
  6. Place the stuffed chicken breasts in a baking dish. Drizzle with olive oil and sprinkle with breadcrumbs, if using.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Remove from oven and let rest for a few minutes before serving.

Notes

  • You can use other cheeses like feta or provolone.
  • Add a pinch of red pepper flakes for a little heat.
