Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Gently fold in the chopped strawberries.
  5. Heat your waffle iron and lightly grease it according to the manufacturer’s instructions.
  6. Pour about 1/2 to 3/4 cup of batter onto the hot waffle iron, depending on its size.
  7. Cook for 3-5 minutes, or until the waffles are golden brown and cooked through.
  8. Serve immediately with your favorite toppings.

Notes

  • For extra fluffy waffles, separate the egg whites and beat them to soft peaks before folding them into the batter.
  • You can substitute other berries for strawberries, such as blueberries or raspberries.
  • Leftover waffles can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 1 month. Reheat in a toaster or oven.
