Ingredients

- 10 ounces fresh spinach, rinsed and dried
- 1 quart fresh strawberries, hulled and sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup chopped pecans or walnuts
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey or maple syrup
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the spinach, sliced strawberries, red onion, and pecans.
- In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, and honey.
- Pour the dressing over the salad and toss gently to combine.
- Season with salt and pepper to taste.
- Serve immediately.

- For extra protein, add grilled chicken or chickpeas.
- You can prepare the dressing ahead of time and store it in the refrigerator.
