A refreshing frozen dessert made with fresh strawberries, lemon juice, and a touch of sweetness. Perfect for a warm day or as a light treat.
Ingredients

- 1 pound fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar (adjust to taste)
- 1/4 cup water
- 1 tablespoon fresh lemon juice
Instructions
- Combine strawberries, sugar, and water in a saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves.
- Cook for 5-7 minutes, or until the strawberries are soft.
- Remove from heat and let cool slightly.
- Transfer the strawberry mixture to a blender or food processor. Add lemon juice.
- Blend until smooth.
- Pour the mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract all the liquid. Discard the solids.
- Cover the bowl and refrigerate for at least 2 hours, or until thoroughly chilled.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the sorbet to an airtight container and freeze for at least 2-4 hours, or until firm, before serving.
Notes
- For a richer flavor, use ripe, in-season strawberries.
- Adjust the amount of sugar based on the sweetness of your strawberries and your personal preference.
- If you don’t have an ice cream maker, you can still make sorbet. Pour the chilled mixture into a shallow freezer-safe dish. Freeze for 30-45 minutes, then remove and stir vigorously with a fork to break up ice crystals. Repeat this process every 30-45 minutes for 2-3 hours, or until the sorbet is firm.
