Description

These delightful strawberry scones are perfect for breakfast, brunch, or an afternoon treat. They are easy to make and bursting with fresh strawberry flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon alcohol-free vanilla extract
  • 1 cup fresh strawberries, hulled and diced
  • 1 tablespoon turbinado sugar (for topping, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the milk, egg, and alcohol-free vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Gently fold in the diced strawberries.
  7. Turn the dough out onto a lightly floured surface. Gently pat the dough into an 8-inch circle, about 1-inch thick.
  8. Cut the circle into 8 wedges.
  9. Place the wedges on the prepared baking sheet, leaving some space between them.
  10. If desired, sprinkle the tops of the scones with turbinado sugar.
  11. Bake for 15-18 minutes, or until golden brown and cooked through.
  12. Let the scones cool on a wire rack before serving.

Notes

  • For best results, use very cold butter.
  • Do not overmix the dough, as this can result in tough scones.
  • You can substitute other berries for strawberries, such as blueberries or raspberries.
  • Scones are best served fresh. Store leftovers in an airtight container at room temperature for up to 2 days.
