- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup milk
- 1 large egg
- 1 teaspoon alcohol-free vanilla extract
- 1 cup fresh strawberries, hulled and diced
- 1 tablespoon turbinado sugar (for topping, optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- In a separate small bowl, whisk together the milk, egg, and alcohol-free vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the diced strawberries.
- Turn the dough out onto a lightly floured surface. Gently pat the dough into an 8-inch circle, about 1-inch thick.
- Cut the circle into 8 wedges.
- Place the wedges on the prepared baking sheet, leaving some space between them.
- If desired, sprinkle the tops of the scones with turbinado sugar.
- Bake for 15-18 minutes, or until golden brown and cooked through.
- Let the scones cool on a wire rack before serving.
Notes
- For best results, use very cold butter.
- Do not overmix the dough, as this can result in tough scones.
- You can substitute other berries for strawberries, such as blueberries or raspberries.
- Scones are best served fresh. Store leftovers in an airtight container at room temperature for up to 2 days.
