Ingredients

- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 pound fresh strawberries, hulled and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh mint
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey or maple syrup
- Salt and black pepper to taste
Instructions
- Combine quinoa and water or vegetable broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and let cool.
- In a large bowl, combine cooled quinoa, sliced strawberries, crumbled feta cheese, chopped red onion, and chopped fresh mint.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey or maple syrup, salt, and black pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill for later.

- For added protein, consider adding grilled chicken or chickpeas.
- You can substitute other berries like blueberries or raspberries for strawberries.
- Adjust the amount of honey or maple syrup to your preferred sweetness.
