Description

A refreshing and healthy salad featuring fresh strawberries, fluffy quinoa, and a light vinaigrette dressing.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 pound fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh mint
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. Combine quinoa and water or vegetable broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and let cool.
  2. In a large bowl, combine cooled quinoa, sliced strawberries, crumbled feta cheese, chopped red onion, and chopped fresh mint.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey or maple syrup, salt, and black pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or chill for later.

  • You can substitute other berries like blueberries or raspberries for strawberries.
