Description

Fluffy strawberry pancakes with fresh strawberries.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 cup fresh strawberries, chopped

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the egg, milk, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the chopped strawberries.
  5. Heat a lightly oiled griddle or frying pan over medium heat.
  6. Pour about 1/4 cup of batter per pancake onto the hot griddle.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  8. Serve immediately with your favorite toppings.

Notes

  • For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
  • You can use frozen strawberries if fresh are not available. Thaw and drain them before adding to the batter.
