Homemade strawberry granola, a perfect breakfast or snack, packed with oats, nuts, and natural sweetness.

- 3 cups rolled oats
- 1/2 cup chopped almonds
- 1/4 cup pumpkin seeds
- 1/4 cup shredded coconut
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract (alcohol-free)
- 1/2 cup freeze-dried strawberries, crushed
- Pinch of salt
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a large bowl, combine oats, almonds, pumpkin seeds, and shredded coconut.
- In a separate small bowl, whisk together olive oil, maple syrup, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and stir until evenly coated.
- Spread the granola mixture in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes, stirring halfway through, until golden brown and crispy.
- Remove from oven and let cool completely.
- Once cooled, stir in the crushed freeze-dried strawberries and salt.
- Store in an airtight container at room temperature for up to 2 weeks.
Notes
- Adjust sweetness to your preference by adding more or less maple syrup.
- Feel free to add other nuts or seeds like cashews, pecans, or sunflower seeds.
- For a chunkier granola, press the mixture firmly onto the baking sheet before baking and avoid stirring too much.
- Serve with yogurt, milk, or as a topping for smoothies.
