Description

Homemade strawberry granola, a perfect breakfast or snack, packed with oats, nuts, and natural sweetness.


Ingredients

  • 3 cups rolled oats
  • 1/2 cup chopped almonds
  • 1/4 cup pumpkin seeds
  • 1/4 cup shredded coconut
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract (alcohol-free)
  • 1/2 cup freeze-dried strawberries, crushed
  • Pinch of salt

Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, almonds, pumpkin seeds, and shredded coconut.
  3. In a separate small bowl, whisk together olive oil, maple syrup, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and stir until evenly coated.
  5. Spread the granola mixture in a single layer on the prepared baking sheet.
  6. Bake for 25-30 minutes, stirring halfway through, until golden brown and crispy.
  7. Remove from oven and let cool completely.
  8. Once cooled, stir in the crushed freeze-dried strawberries and salt.
  9. Store in an airtight container at room temperature for up to 2 weeks.

Notes

  • Adjust sweetness to your preference by adding more or less maple syrup.
  • Feel free to add other nuts or seeds like cashews, pecans, or sunflower seeds.
  • For a chunkier granola, press the mixture firmly onto the baking sheet before baking and avoid stirring too much.
  • Serve with yogurt, milk, or as a topping for smoothies.
