A refreshing and vibrant strawberry gazpacho, perfect for a light meal or appetizer.
Ingredients

- 1 lb ripe strawberries, hulled
- 1/2 English cucumber, peeled and seeded
- 1/4 red bell pepper, cored and seeded
- 2 tablespoons red onion, finely chopped
- 1 clove garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 2–3 fresh basil leaves, for garnish (optional)
Instructions
- Combine strawberries, cucumber, red bell pepper, red onion, garlic, olive oil, red wine vinegar, salt, and pepper in a blender.
- Blend until smooth.
- Taste and adjust seasonings as needed.
- Chill for at least 30 minutes before serving.
- Garnish with fresh basil leaves, if desired.
Notes
- For a thinner gazpacho, add a splash of water or vegetable broth.
- Serve with crusty bread for dipping.
- This gazpacho is best enjoyed fresh.
