Description

A refreshing and vibrant strawberry gazpacho, perfect for a light meal or appetizer.


Ingredients

Scale
  • 1 lb ripe strawberries, hulled
  • 1/2 English cucumber, peeled and seeded
  • 1/4 red bell pepper, cored and seeded
  • 2 tablespoons red onion, finely chopped
  • 1 clove garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 23 fresh basil leaves, for garnish (optional)

Instructions

  1. Combine strawberries, cucumber, red bell pepper, red onion, garlic, olive oil, red wine vinegar, salt, and pepper in a blender.
  2. Blend until smooth.
  3. Taste and adjust seasonings as needed.
  4. Chill for at least 30 minutes before serving.
  5. Garnish with fresh basil leaves, if desired.

Notes

  • For a thinner gazpacho, add a splash of water or vegetable broth.
  • Serve with crusty bread for dipping.
  • This gazpacho is best enjoyed fresh.
