Description

Ingredients

  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, chilled and cut into small pieces
  • 1/4 cup ice water, plus more if needed
  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar, plus 1 tablespoon for sprinkling
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract (alcohol-free)
  • 1 large egg, beaten (for egg wash)

Instructions

  1. In a large bowl, whisk together the flour and salt. Cut in the chilled butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. In a medium bowl, combine the sliced strawberries, 1/4 cup granulated sugar, cornstarch, and vanilla extract. Toss gently to coat.
  5. On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Carefully transfer the dough to the prepared baking sheet.
  6. Arrange the strawberry mixture in the center of the dough, leaving a 2-inch border around the edges.
  7. Fold the edges of the dough over the strawberries, pleating as you go.
  8. Brush the folded crust with the beaten egg and sprinkle with the remaining 1 tablespoon of granulated sugar.
  9. Bake for 35-45 minutes, or until the crust is golden brown and the strawberries are bubbly.
  10. Let the galette cool on the baking sheet for at least 15 minutes before slicing and serving.

Notes

  • For best results, use very cold butter and ice water for the crust.
  • You can substitute other fruits like peaches, blueberries, or apples for the strawberries.
