Description

These Strawberry Crumb Bars feature a buttery shortbread crust, a sweet and tangy strawberry filling, and a delightful crumb topping. They are perfect for a dessert or a snack.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (for filling)
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, cream together the softened butter, 3/4 cup granulated sugar, and vanilla extract until light and fluffy.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a crumbly dough forms.
  5. Press about two-thirds of the dough evenly into the bottom of the prepared baking pan.
  6. In a medium bowl, combine the sliced strawberries, 1/4 cup granulated sugar, cornstarch, and lemon juice. Stir gently to coat the strawberries.
  7. Spread the strawberry filling evenly over the crust in the baking pan.
  8. Crumble the remaining one-third of the dough over the strawberry filling.
  9. Bake for 45-55 minutes, or until the crumb topping is golden brown and the filling is bubbly.
  10. Let the bars cool completely in the pan on a wire rack before lifting out and cutting into squares.

Notes

  • For best results, use fresh, ripe strawberries.
  • If strawberries are very sweet, you can reduce the sugar in the filling slightly.
  • These bars can be stored at room temperature in an airtight container for up to 3 days, or in the refrigerator for up to 5 days.
  • You can substitute other berries like raspberries or blueberries for the strawberries.
