- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract

- 3 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (for filling)
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, cream together the softened butter, 3/4 cup granulated sugar, and vanilla extract until light and fluffy.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a crumbly dough forms.
- Press about two-thirds of the dough evenly into the bottom of the prepared baking pan.
- In a medium bowl, combine the sliced strawberries, 1/4 cup granulated sugar, cornstarch, and lemon juice. Stir gently to coat the strawberries.
- Spread the strawberry filling evenly over the crust in the baking pan.
- Crumble the remaining one-third of the dough over the strawberry filling.
- Bake for 45-55 minutes, or until the crumb topping is golden brown and the filling is bubbly.
- Let the bars cool completely in the pan on a wire rack before lifting out and cutting into squares.
Notes
- For best results, use fresh, ripe strawberries.
- If strawberries are very sweet, you can reduce the sugar in the filling slightly.
- These bars can be stored at room temperature in an airtight container for up to 3 days, or in the refrigerator for up to 5 days.
- You can substitute other berries like raspberries or blueberries for the strawberries.
