- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/4 cup unsalted butter, cold and cubed
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the diced strawberries.
- Pour the batter into the prepared baking pan and spread evenly.
- To make the streusel topping, combine the flour, granulated sugar, and brown sugar in a small bowl.
- Cut in the cold cubed butter with a pastry blender or your fingertips until coarse crumbs form.
- Sprinkle the streusel topping evenly over the cake batter.
- Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the coffee cake cool in the pan on a wire rack before serving.
