Description

A delightful strawberry cobbler featuring fresh strawberries baked under a sweet biscuit topping. Perfect for dessert.

Ingredients

Scale
  • 1 pound fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar (for strawberries)
  • 1 tablespoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine sliced strawberries, 1/2 cup granulated sugar, and lemon juice. Toss gently and set aside.
  3. In a separate medium bowl, whisk together flour, 1/2 cup granulated sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. Stir in the milk and vanilla extract until just combined to form a soft dough. Do not overmix.
  6. Pour the strawberry mixture into an 8×8 inch baking dish.
  7. Drop spoonfuls of the biscuit dough over the top of the strawberries.
  8. Bake for 30-35 minutes, or until the topping is golden brown and the strawberries are bubbly.
  9. Let cool slightly before serving.

Notes

  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
  • You can substitute other berries like blueberries or raspberries for strawberries.
  • For extra flavor, sprinkle a little cinnamon or nutmeg into the biscuit topping.
