- 1 pound fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar (for strawberries)
- 1 tablespoon lemon juice
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar (for topping)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into cubes
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine sliced strawberries, 1/2 cup granulated sugar, and lemon juice. Toss gently and set aside.
- In a separate medium bowl, whisk together flour, 1/2 cup granulated sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla extract until just combined to form a soft dough. Do not overmix.
- Pour the strawberry mixture into an 8×8 inch baking dish.
- Drop spoonfuls of the biscuit dough over the top of the strawberries.
- Bake for 30-35 minutes, or until the topping is golden brown and the strawberries are bubbly.
- Let cool slightly before serving.
Notes
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
- You can substitute other berries like blueberries or raspberries for strawberries.
- For extra flavor, sprinkle a little cinnamon or nutmeg into the biscuit topping.
