Description

These strawberry brownies are a delightful twist on a classic dessert. They feature a rich, fudgy brownie base infused with strawberry flavor and topped with a luscious strawberry glaze.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup fresh strawberries, finely diced
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons fresh strawberry puree (from about 1/4 cup strawberries)
  • 1/2 teaspoon lemon juice (optional, for brightness)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, combine the melted butter and granulated sugar. Whisk until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the finely diced fresh strawberries.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  9. Let the brownies cool completely in the pan on a wire rack.
  10. While the brownies cool, prepare the glaze: In a small bowl, whisk together the powdered sugar, strawberry puree, and lemon juice (if using) until smooth and pourable.
  11. Once the brownies are completely cool, pour the glaze over them and spread evenly.
  12. Allow the glaze to set before slicing and serving.

Notes

  • For a richer strawberry flavor, you can use freeze-dried strawberry powder in the brownie batter.
  • Ensure the brownies are completely cool before glazing to prevent the glaze from melting.
  • Store leftover brownies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
