- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh strawberries, hulled and quartered
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon fresh thyme, chopped (optional)
Instructions
- Pat chicken breasts dry with paper towels. Season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, or until cooked through and golden brown. Remove chicken from skillet and set aside.
- Reduce heat to medium. Add strawberries, balsamic vinegar, and honey to the skillet. Cook, stirring occasionally, for 5-7 minutes, or until strawberries have softened and the sauce has thickened slightly.
- Return chicken to the skillet, spooning the strawberry balsamic glaze over the chicken.
- Garnish with fresh thyme, if desired, and serve immediately.
