Ingredients

  • 2 boneless, skinless chicken breasts (about 6 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh strawberries, hulled and quartered
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme, chopped (optional)

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, or until cooked through and golden brown. Remove chicken from skillet and set aside.
  3. Reduce heat to medium. Add strawberries, balsamic vinegar, and honey to the skillet. Cook, stirring occasionally, for 5-7 minutes, or until strawberries have softened and the sauce has thickened slightly.
  4. Return chicken to the skillet, spooning the strawberry balsamic glaze over the chicken.
  5. Garnish with fresh thyme, if desired, and serve immediately.
