Ingredients

  • 1 whole trout (about 11.5 lbs), cleaned and scaled
  • 1 lemon, thinly sliced
  • 2 sprigs fresh dill
  • 2 sprigs fresh mint
  • Salt and freshly ground black pepper to taste
  • For the dressing:
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prepare the trout: Pat the trout dry with paper towels. Season the cavity and exterior with salt and pepper. Stuff the cavity with lemon slices, dill sprigs, and mint sprigs.
  2. Steam the trout: Place the trout in a steamer basket. Bring water to a boil in a pot underneath the steamer. Steam for 8-12 minutes, or until the fish is flaky and cooked through. Cooking time will vary depending on the size of the trout.
  3. Make the dressing: While the fish is steaming, combine the chopped mint, chopped dill, olive oil, lemon juice, honey, minced garlic, and red pepper flakes (if using) in a small bowl. Whisk until well combined.
  4. Serve: Carefully transfer the steamed trout to a serving platter. Drizzle generously with the mint and dill dressing. Serve immediately.

  • You can use other herbs like parsley or chives in the dressing.
