Description

Spicy Shrimp and Vegetable Skewers are a flavorful and healthy meal, perfect for grilling. These skewers combine succulent shrimp with colorful vegetables, all coated in a spicy marinade.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 zucchini, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sriracha sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, whisk together olive oil, soy sauce, honey, sriracha, garlic powder, and black pepper to create the marinade.
  3. Add the shrimp, red bell pepper, yellow bell pepper, zucchini, and red onion to the marinade. Toss gently to coat all ingredients.
  4. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.
  5. Preheat your grill to medium-high heat.
  6. Thread the marinated shrimp and vegetables onto the skewers, alternating between shrimp and different vegetables.
  7. Grill the skewers for 2-3 minutes per side, or until the shrimp are pink and opaque and the vegetables are tender-crisp.
  8. Serve immediately and enjoy your spicy shrimp and vegetable skewers.

Notes

  • For extra spice, add more sriracha to the marinade.
  • Other vegetables like cherry tomatoes, mushrooms, or pineapple chunks can be added.
