- 1 pound large shrimp, peeled and deveined
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sriracha sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a medium bowl, whisk together olive oil, soy sauce, honey, sriracha, garlic powder, and black pepper to create the marinade.
- Add the shrimp, red bell pepper, yellow bell pepper, zucchini, and red onion to the marinade. Toss gently to coat all ingredients.
- Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.
- Preheat your grill to medium-high heat.
- Thread the marinated shrimp and vegetables onto the skewers, alternating between shrimp and different vegetables.
- Grill the skewers for 2-3 minutes per side, or until the shrimp are pink and opaque and the vegetables are tender-crisp.

Notes
- For extra spice, add more sriracha to the marinade.
- Other vegetables like cherry tomatoes, mushrooms, or pineapple chunks can be added.
