Description

These cookies capture the essence of s’mores in a convenient, portable form. They feature a graham cracker-infused cookie base, gooey toasted marshmallows, and melty chocolate.


Ingredients

  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (150g) all-purpose flour
  • 1 cup (100g) finely crushed graham crackers
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (170g) milk chocolate chips
  • 1 1/2 cups mini marshmallows

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, crushed graham crackers, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the milk chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between them.
  8. Bake for 8-10 minutes, or until the edges are lightly golden.
  9. Remove from oven and immediately top each cookie with several mini marshmallows.
  10. Return to the oven for 2-3 minutes, or until marshmallows are puffed and lightly golden.
  11. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra graham cracker flavor, sprinkle a little extra crushed graham cracker on top of the cookies before baking.
  • If you don’t have mini marshmallows, you can cut larger marshmallows into smaller pieces.
  • These cookies are best enjoyed warm, but they are also delicious at room temperature.
