- 2 tablespoons olive oil
- 8 small corn or flour tortillas
- Salt and black pepper to taste

Instructions
- Heat the olive oil in a large non-stick skillet over medium heat.
- Crack the eggs directly into the hot skillet, being careful not to overcrowd the pan. Fry for 2-3 minutes until the whites are set and the yolks are still runny.
- Using a spatula, gently smash each egg flat against the skillet until the yolk breaks and spreads. Continue to cook for another 1-2 minutes until the edges are crispy and golden brown. Season with salt and pepper.
- While the eggs are cooking, warm the tortillas according to package directions (microwave, skillet, or oven).
- Place 1-2 smashed eggs onto each warm tortilla.
- Add your desired toppings and serve immediately.
