Description

These Smashed Egg Tacos are a quick and satisfying meal. Crispy fried eggs are served in warm tortillas with your favorite toppings.


Ingredients

  • 8 large eggs
  • 2 tablespoons olive oil
  • 8 small corn or flour tortillas
  • Salt and black pepper to taste
  • Optional toppings: avocado slices, salsa, hot sauce, chopped cilantro, shredded cheese

Instructions

  1. Heat the olive oil in a large non-stick skillet over medium heat.
  2. Crack the eggs directly into the hot skillet, being careful not to overcrowd the pan. Fry for 2-3 minutes until the whites are set and the yolks are still runny.
  3. Using a spatula, gently smash each egg flat against the skillet until the yolk breaks and spreads. Continue to cook for another 1-2 minutes until the edges are crispy and golden brown. Season with salt and pepper.
  4. While the eggs are cooking, warm the tortillas according to package directions (microwave, skillet, or oven).
  5. Place 1-2 smashed eggs onto each warm tortilla.
  6. Add your desired toppings and serve immediately.
