- 3 lbs beef chuck roast
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 4 carrots, chopped
- 4 potatoes, diced
- 1 onion, sliced
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
- Transfer the roast to the slow cooker.
- Season the roast with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
- Add carrots, potatoes, and onion around the roast.
- In a bowl, mix beef broth, tomato paste, and Worcestershire sauce. Pour over the roast.
- Cover and cook on low for 8 hours or high for 4-5 hours, until the meat is tender.
- Remove the roast and vegetables. Serve warm.
Notes
- For a thicker gravy, mix 1 tbsp cornstarch with 2 tbsp water and stir into the slow cooker juices after cooking.
- You can substitute beef chuck roast with lamb for a different flavor.
- Add mushrooms or celery for extra vegetables.
