Description

A flavorful and easy slow cooker chicken dish with Mediterranean-inspired ingredients.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth
  • 2 tbsp olive oil
  • 1 tbsp lemon juice

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add tomatoes, olives, red onion, and garlic on top.
  3. Sprinkle with oregano, basil, salt, and pepper.
  4. Pour chicken broth, olive oil, and lemon juice over the chicken.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Serve hot with your choice of side dishes.

Notes

  • For extra flavor, marinate chicken for 30 minutes before cooking.
  • Add feta cheese before serving if desired.
