- 4 boneless, skinless chicken breasts
- 1 cup diced tomatoes
- 1/2 cup sliced black olives
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chicken broth
- 2 tbsp olive oil
- 1 tbsp lemon juice
Instructions
- Place chicken breasts in the slow cooker.
- Add tomatoes, olives, red onion, and garlic on top.
- Sprinkle with oregano, basil, salt, and pepper.
- Pour chicken broth, olive oil, and lemon juice over the chicken.
- Cover and cook on low for 6 hours or high for 3 hours.
- Serve hot with your choice of side dishes.
Notes
- For extra flavor, marinate chicken for 30 minutes before cooking.
- Add feta cheese before serving if desired.
- Serve with rice, quinoa, or crusty bread.
