A comforting and easy slow cooker chicken noodle soup, perfect for a cozy meal.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 6 cups chicken broth
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp black pepper
- 8 oz egg noodles
- 2 tbsp chopped fresh parsley
Instructions
- Add chicken, broth, carrots, celery, onion, garlic, thyme, rosemary, bay leaf, salt, and pepper to the slow cooker.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove chicken and shred it using two forks.
- Return shredded chicken to the slow cooker.
- Add noodles and cook on high for 15-20 minutes until tender.
- Stir in parsley before serving.
Notes
- Use rotisserie chicken for a quicker version.
- Store leftovers in the fridge for up to 3 days.
- Freeze without noodles for longer storage.
