Description

A comforting and easy slow cooker chicken noodle soup, perfect for a cozy meal.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 oz egg noodles
  • 2 tbsp chopped fresh parsley

Instructions

  1. Add chicken, broth, carrots, celery, onion, garlic, thyme, rosemary, bay leaf, salt, and pepper to the slow cooker.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  3. Remove chicken and shred it using two forks.
  4. Return shredded chicken to the slow cooker.
  5. Add noodles and cook on high for 15-20 minutes until tender.
  6. Stir in parsley before serving.

Notes

  • Use rotisserie chicken for a quicker version.
  • Store leftovers in the fridge for up to 3 days.
  • Freeze without noodles for longer storage.
