- 1 pound fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar (or to taste)
- 1 teaspoon fresh lemon juice
- 1 cup heavy cream, chilled
- 2 tablespoons powdered sugar (or to taste)
- 1/2 teaspoon alcohol-free vanilla extract
Instructions
- In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Stir gently and let sit for 15-20 minutes to allow the strawberries to release their juices.
- While the strawberries are macerating, in a separate cold bowl, whip the heavy cream with powdered sugar and alcohol-free vanilla extract until soft peaks form.
- Gently fold about half of the whipped cream into the macerated strawberries.
- Spoon the strawberry fool into individual serving glasses.
- Top with the remaining whipped cream.
- Chill for at least 30 minutes before serving for best results.
Notes
- For a smoother texture, you can mash some of the strawberries before folding in the cream.
- Adjust the sugar amounts to your preference and the sweetness of the strawberries.
- This dessert is best served fresh but can be stored in the refrigerator for up to 1 day.
