Description

A hearty Sicilian-inspired chicken soup packed with vegetables and rich flavors.


Ingredients

Scale
  • 1 lb boneless chicken breast, cubed
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14 oz) diced tomatoes
  • 6 cups chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 1 cup small pasta
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Add onion, garlic, carrots, and celery. Cook for 5 minutes.
  4. Stir in diced tomatoes, chicken broth, oregano, basil, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add pasta and cook for 10 more minutes.
  7. Stir in fresh parsley before serving.

Notes

  • Use gluten-free pasta if needed.
  • Add more broth if you prefer a thinner soup.
  • Store leftovers in the fridge for up to 3 days.
