Description

Shrimp Scampi with Zucchini Noodles is a light and flavorful dish, perfect for a quick weeknight meal. This recipe replaces traditional pasta with fresh zucchini noodles, making it a healthier option.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons unsalted butter
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 medium zucchini, spiralized into noodles
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.
  3. Add minced garlic to the same skillet and cook for 30 seconds until fragrant.
  4. Pour in white wine (or chicken broth) and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pan.
  5. Stir in butter, parsley, and red pepper flakes (if using). Cook until butter is melted and sauce is slightly thickened.
  6. Add zucchini noodles to the skillet and toss with the sauce for 1-2 minutes, just until warmed through and slightly tender. Do not overcook, or the noodles will become watery.
  7. Return cooked shrimp to the skillet and toss to combine with the zucchini noodles and sauce.
  8. Season with salt and black pepper to taste. Serve immediately.

Notes

  • For best results, use fresh shrimp.
  • Adjust the amount of red pepper flakes to your preferred spice level.
  • If you don’t have a spiralizer, you can use a vegetable peeler to create wide ribbons of zucchini.
  • Serve with a sprinkle of Parmesan cheese for extra flavor, if desired.
