Description

Sheet Pan Tikka Masala Chicken is a flavorful and easy-to-prepare meal. Chicken and vegetables are coated in a rich tikka masala sauce and baked on a single sheet pan.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 cup broccoli florets
  • 1/2 cup Greek yogurt
  • 1/4 cup tikka masala paste
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine chicken pieces, red bell pepper, green bell pepper, onion, and broccoli florets.
  3. In a separate small bowl, whisk together Greek yogurt, tikka masala paste, and olive oil. Pour the mixture over the chicken and vegetables. Toss to coat everything evenly.
  4. Spread the chicken and vegetables in a single layer on the prepared baking sheet. Season with salt and black pepper.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Garnish with fresh cilantro, if desired. Serve immediately with rice or naan bread.

Notes

  • For extra spice, add a pinch of cayenne pepper to the tikka masala sauce.
  • You can use other vegetables like cauliflower, carrots, or zucchini.
