Sheet Pan Tikka Masala Chicken is a flavorful and easy-to-prepare meal. Chicken and vegetables are coated in a rich tikka masala sauce and baked on a single sheet pan.

- 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1 cup broccoli florets
- 1/2 cup Greek yogurt
- 1/4 cup tikka masala paste
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine chicken pieces, red bell pepper, green bell pepper, onion, and broccoli florets.
- In a separate small bowl, whisk together Greek yogurt, tikka masala paste, and olive oil. Pour the mixture over the chicken and vegetables. Toss to coat everything evenly.
- Spread the chicken and vegetables in a single layer on the prepared baking sheet. Season with salt and black pepper.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
- Garnish with fresh cilantro, if desired. Serve immediately with rice or naan bread.
Notes
- For extra spice, add a pinch of cayenne pepper to the tikka masala sauce.
- You can use other vegetables like cauliflower, carrots, or zucchini.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
