Description

Quick and easy sheet pan shrimp fajitas with colorful bell peppers and onions.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 bell peppers (any color), thinly sliced
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Warm tortillas, for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the sliced bell peppers and red onion. Drizzle with 1 tablespoon of olive oil and season with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  3. Spread the seasoned vegetables in a single layer on the prepared baking sheet.
  4. Roast for 10 minutes.
  5. While the vegetables are roasting, pat the shrimp dry with paper towels. In the same bowl (no need to clean), toss the shrimp with the remaining 1 tablespoon of olive oil, a pinch of salt, and pepper.
  6. Remove the baking sheet from the oven. Add the seasoned shrimp to the baking sheet, spreading them among the vegetables.
  7. Return the baking sheet to the oven and roast for another 8-10 minutes, or until the shrimp are pink and cooked through and the vegetables are tender-crisp.
  8. Remove from the oven, squeeze fresh lime juice over everything, and sprinkle with fresh cilantro.
  9. Serve immediately with warm tortillas and your favorite toppings.

Notes

  • For extra spice, add a pinch of cayenne pepper to the seasoning mix.
  • You can prepare the vegetables ahead of time and store them in the refrigerator.
  • Adjust cooking time based on your oven and desired doneness of shrimp and vegetables.
