Quick and easy sheet pan shrimp fajitas with colorful bell peppers and onions.

- 1 pound large shrimp, peeled and deveined
- 2 bell peppers (any color), thinly sliced
- 1 red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
- Warm tortillas, for serving
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine the sliced bell peppers and red onion. Drizzle with 1 tablespoon of olive oil and season with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
- Spread the seasoned vegetables in a single layer on the prepared baking sheet.
- Roast for 10 minutes.
- While the vegetables are roasting, pat the shrimp dry with paper towels. In the same bowl (no need to clean), toss the shrimp with the remaining 1 tablespoon of olive oil, a pinch of salt, and pepper.
- Remove the baking sheet from the oven. Add the seasoned shrimp to the baking sheet, spreading them among the vegetables.
- Return the baking sheet to the oven and roast for another 8-10 minutes, or until the shrimp are pink and cooked through and the vegetables are tender-crisp.
- Remove from the oven, squeeze fresh lime juice over everything, and sprinkle with fresh cilantro.
- Serve immediately with warm tortillas and your favorite toppings.
Notes
- For extra spice, add a pinch of cayenne pepper to the seasoning mix.
- You can prepare the vegetables ahead of time and store them in the refrigerator.
- Adjust cooking time based on your oven and desired doneness of shrimp and vegetables.
