Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 1/2 lbs sweet potatoes, peeled and cut into 1-inch cubes
  • 1 large head broccoli, cut into florets
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine chicken, sweet potatoes, broccoli, olive oil, oregano, garlic powder, salt, and pepper. Toss until everything is evenly coated.
